Un-Aged Apple Spirit (Eau de Vie)

Eau de vie — noun (mass noun) brandy, esp. a clear spirit distilled from fruit(origin: French, literally: water of life). Tasmania is home to an acclaimed single–malt whisky industry as well as an abundance of finely crafted gin, wine and beer. With such a rich heritage of fruit growing it is only right that the humble apple has been encapsulated in such a uniquely Tasmanian spirit as Charles Oates Distilling’s Apple Blanco. Apple blanco has sweet fruit aromas yet its dry piquant flavours give it a curious affinity with Cuban white rums and unaged tequila. This opens up a world of possibilities for its use in mixed drinks. This white spirit is a pure expression of the Huon Valley apples grown in the cold climate of southern Tasmania. A clean and pure expression of the fruit that makes up this spirit is a bartender’s best friend and is a perfect mixer in cocktails. After harvesting, the fruit is gently fermented and double distilled in small batches in our unique Charentais alembic still to capture the essence of these crisp and aromatic apples. With lifted floral and apple aromas developing into a dry and delicately spicy eau–de–vie on the palate, Apple Blanco is as enjoyable on its own as it is in a variety of aperitif cocktails. The Charentais Pot still Knapp Lewer Contracting have carefully constructed a 900 litre copper alembic charentais still for Charles Oates Distillery. This elegantly crafted still is based on the same alembic stills used to produce the world’s finest cognacs. It is in this beautiful and unique still that blanco is created. The Fruit Apple Blanco is a double–distilled eau–de–vie spirit made from the pressed and fermented juice of apples grown in the heartland of Tasmania’s fruit industry since the 1880’s — the Huon Valley. This is the first commercially produced spirit from Huon Valley apples since a colonial–era ban on distilling in Tasmania was overturned in 1992.
